My wine experiment back in June.

Mike picked the honeysuckle blossoms for me - dodging the bees ! Now, I'm rinsing in cold water, then picking all the green leaves out (they're toxic).

Here, we have the washed picked over blossoms, 2 - 1 gal glass jars, lemon essential oil, ascorbic acid and the yeast.

Off to the side, I melted 4 pounds of sugar into 4 cups of water and let it come to a pre-boil state. I let this cool and divided it evenly between the 2 glass jars. Also, at this point, I added some lemon oil and some ascorbic acid.

Covered, I'm letting it steep for 6 hours

After 6 hours of steeping, I've added the yeast and topped it off with lukewarm water.

After, the yeast has been added.

Nice little 'pantyhose' hats securely placed on the jar mouth to prevent fruit flies from getting in, while allowing the CO2 to escape. To be continued in a couple of days, weeks or months !!! We will see if it works !!!
UPDATE :: I let this ferment about 2 mths and had to put it in bottles ...I lost one jar to mold .... ....BUT, the other jar is fine !!! OMGosh !!! It is the nectar of the gods !!!! It's a good thing I am not partaking at the moment!!! I have less than a gal ....... It's sweet with a slight lemon tangy note on the front end ....friends ...next year, Mimi will be making sum more of dat dare juice!!!!!
